2022 (r-So.) | 14/6: Simon appeared in all 14 games for the Hilltoppers in 2022 while making six starts. He put together a record-breaking season for the Tops by becoming WKU's all-time leader for touchdown receptions by a tight end. His touchdown against Charlotte gave him sole possession of the record at 14 touchdowns, and he added two more later in the year against Auburn to make his career total 16. Overall, Simon finished the season with 20 catches for 273 yards and seven touchdowns. After being named to the Mackey Award List prior to the season, Simon was named All-Conference USA Second Team at season's end.
2021 (So.) | 1/1: Simon played just one game due to a season-ending injury in the season opener. In that one game, he caught three passes for 73 yards and two touchdowns. Simon will count the season as a redshirt year.
2020 (So.) | 12/12: Simon started all 12 games in his second campaign, making 33 receptions for 370 yards and three touchdowns. Had multiple catches in 9-of-12 games, including a season-high six on Oct. 17 at UAB. Reached the 80-yard mark twice, with 81 yards against the Blazers and a season-high 84 in the LendingTree Bowl vs. Georgia State. Led the Hilltoppers with five "explosive" catches of 20+ yards, including a season-long 40-yard grab against the Panthers. Enters the 2021 campaign with seven career touchdown catches, the seventh-most by a tight end in WKU's 102-season program history. He will retain his sophomore year of eligibility due to the COVID-19 pandemic.
2019 (Fr.) | 13/6: Simon appeared in all 13 games for the Hilltoppers, including six starts. The true freshman made 30 receptions for 430 yards and four touchdowns in his debut season on The Hill. He had one score in each of his first four games, as four of his first eight collegiate catches went for six points. His 77-yard touchdown catch-and-run on Sept. 14 vs. Louisville was a season-high. He put up season-highs of six receptions for 106 yards in WKU's First Responder Bowl victory; he was the only tight end in the nation to have 100+ yards in a 2019-20 bowl game.
HS/Misc.: Simon played for Knights' head coach Roosevelt Nelson and was invited to the Progress Energy Bowl North-South All-Star Game after his senior season. Rated as a three-star with an 80 composite score by 247Sports, ranking 44th overall in the state. He chose WKU over Wake Forest, Louisville, Appalachian State and East Carolina.
